Singapore Airlines has introduced a new seasonal Business Class dining experience on its nonstop Barcelona–Singapore service, with menus created by Michelin-starred Catalan chef Nandu Jubany and supported by gategourmet’s Spanish culinary team.
The new menus debuted on 1 May 2026, bringing the flavors of Catalonia to the cabin through seasonal ingredients, traditional cooking techniques and dishes designed specifically for long-haul travel. The launch also forms part of Singapore Airlines’ 20th anniversary celebrations in Barcelona.
Behind the menu is a close collaboration between Chef Jubany, Singapore Airlines, and gategourmet, the airline’s catering partner in Barcelona. Over several months, the teams worked through tastings, recipe refinements and ingredient selection to ensure each dish could retain its flavor, texture and character at cruising altitude.

This adaptation is an essential part of inflight dining. Dishes that work beautifully in a restaurant environment need to be carefully rethought for the cabin, where pressure and humidity can affect how flavors are perceived. From seasoning and sauces to cooking methods and presentation, every detail was reviewed to help bring the chef’s Catalan vision onboard with consistency and care.
The seasonal menus include dishes inspired by the region’s culinary traditions, such as Catalan-style cod, monkfish suquet with prawns, roast chicken with apples, prunes and apricots, beef fricandó with chanterelle mushrooms, crema catalana and other locally rooted recipes.
